Briny, savory, and with a deep umami flavor, Colatura di Alici is an ancient Roman fish sauce dating back to the height of the empire, where it could be found throughout the Mediterranean. Armatore Colatura is made from anchovies caught on the Amalfi Coast during spring, crushed and layered with sea salt in chestnut casks, then matured for 24-36 months. The result is a truly singular product that can be used to make anything from aglio olio, to shellfish, to salads a heightened, sum-is-greater-than-its-parts dish. A very little goes a very long way, but be adventurous, and trust in the colatura!
