Our first partner, Amber Waves is an ocean-side farm in Amagansett, and the epicenter of the local food movement on the South Fork of Long Island. Amber Waves' mission is to provide free educational opportunities in agriculture for the local community of growers, cooks, and eaters.
Amber Waves grows a prize-winning heritage variety of Hard Red Winter Wheat called Red Warthog, which was the grain we started L'Isolina with. Red Warthog is high in protein, rich in flavor, and has a gorgeous earth-red color which make this a stunner in our pasta!
Founded in Amagansett in 2003, Balsam Farms started with ten rented acres and a small farmstand. Today, they farm approximately 200 acres of mixed vegetables, fruits, herbs, cut flowers, and grains.
Balsam Farms grow a Hard Red Spring Wheat which is quite high in protein and tastes earthy, bready, and has slight spice notes. The fiber-rich bran mills fine and makes for a beautiful red-flecked pasta when extruded.
